Do you think peo- ple are interested in trying unique cuisines? A: [The food here] is very diverse and you can- not find diversity [like this] in restaurants in many places. You can find Mediterranean food on one corner, Mexican on another and French on another and [so on.] The peninsula is a mix of everything; therefore, I think that is what restaurant goers like and look for. People like to try a little bit of everything, no matter what type of food it can be. It can start from a small appetizer to a dessert. Anything that “looks” good, they will want to try. Q: What things do you like to do in the area with your family on your days off from Rio Grill? A: I really enjoy hiking. Garland Ranch in Carmel is one of my favorite places to go. I enjoy watching soccer. I try to go to any home game here in Fort Ord.We have the Monterey Bay Union Soccer Team, which Coastal Roots caters for. It has been a great investment for our restaurants. I also enjoy eating out locally; I like to see what else is out there to get ideas. Q: What types of food do you cook at home? A: During the holidays, I like to cook prime rib and pumpkin pie with Grand Marnier orange sauce. I also like to cook food from my hometown, where I grew up in Oaxaca. Our typical dishes there would be tlayudas, memelas, mole and chilaquiles, just to name a few. These dishes are almost an everyday item in my household. I cannot forget my roots.
